The Passito of Pantelleria
A meditation doc.
The island’s warm climate favors the growth of zibibbo, a grape variety that has been grown here since Phoenician times.
Both Moscato and Passito are made from zibibbo.
Passito di Pantelleria, which since 1977 has obtained the designation Doc, is made from zibibbo grapes harvested when they are ripe enough to turn into a naturally sweet must.
It therefore needs no additions: it is already a dessert wine in itself, made very special by its sensual amber color and its intense bouquet, laden with nuances of honey, dates and ripe fruit.
It has an alcohol content of 20° and should be served in tulip-shaped glasses at a temperature of 10°-12°.
Its warm, soft and velvety taste enhances cheeses and desserts of all kinds.
